Question:
I’m very curious about oil free cooking. Are you saying oils are never used to sauté or roast veggies in the oven?

Answer:
Thank you Carol, and I appreciate your question. This is a fairly common one that comes up and you know, I'll say that you know, this is really a directed to those of you that are in the plant-based courses and this question comes up quite a bit among the forks overnight students specifically. And let me address this broadly. Okay, so, you know in the Forks Over Knives course or that approach to eating there is an emphasis on omitting added fat to your cooking for the health of it. Okay. However, we have students that are sort of our entering this plant-based way of eating from very different places and each each person's story is unique and I you know, I I love hearing about them and I respect everyone starting point and you know with that in mind, you know, we have students that are ready to go, you know cold turkey on the added fats and you know, 100% fat added fat free and others are gonna ease into it. And so you're gonna see some recipes that are oil free you might see some that have a little bit of added fat now. It's gonna be up to you right to figure out where you are on your journey and how you want to approach the cooking course and how quickly you want to make changes to your diet in this this lifestyle. Okay. I'm going to say that in our plant-based courses we have lessons that will walk you through the process of. Sauteing and in sweating without oil as well as roasting without oil. Those are the the couple of primary cooking methods that we use and so you'll learn the technique of doing those without added fat. All right. I mean, otherwise take it at your pace, you know based upon your personality is well as the desires and needs of those that you're cooking for. All right, making big changes very quickly can be difficult for some people and you know, as we all know, I think when it comes to New Year's resolutions many of those are kicked to the side after just a matter of several weeks because they're difficult to adhere to so, you know, do be reasonable and don't be hard on yourself if you're comfortable going 100% added oil. Free from the get-go all the power to you. But if you feel like you want to take steps along the way by reducing your oil first, I think that's perfectly reasonable. Okay in the end. It's not up to me to to provide advice. Excuse me, and certainly not up to me to judge what you're doing. It's totally up to you to figure out the solution.
