Question:
I like baked 'kale chips'. I tried making them by placing them in a mixing bowl and adding balsamic vinegar, tamari and nutritional yeast. If I find the kale in this recipe to be too bitter, what might I omit or add?

Well, let's see here. Yeah, start with the vinegar and and see where that takes you in terms of of cutting back or or omitting just it depends on the nuances of each of these ingredients. Okay, some of them have more prominent sweetness. Some of them have more underlying acidity and bitter notes, okay. And then, you know also, you know kale itself depending on the type of kale and the maturity of the kale can also have some pretty strong bitter notes, you know, in which case you, you know might want to increase some of the sweet. components that you add, you know, whether it's A type of balsamic vinegar a particular style of balsamic vinegar, you know or even a little pinch of brown sugar perhaps or or jaggery to balance some of the bitterness. Okay. So while I don't have a specific answer for you because there are all of these ingredients you mentioned including the kale itself are variables. So there's enough moving Parts here that I have to you know, just isolate one by one and then experiment and I hope you will do that too.
