Is it possible to make a vegan choux type pastry? And if so how would you make a light creamy filling ie. for eclair or profiterole?

Answer:

I actually put a link in the q and a to a recipe made by Miko Shinar for VG News. It's a couple of years old, I haven't tested it, but Meko does write very good recipes and it's for a per vitreal. Uh, so you can go ahead and give that a try. Do a Google search. There are others, I believe Gretchen has one. There are a number of people doing Chox paste in terms of a creamy filling that is a piece of cake. I mean you can do cashew cream, you can do a vanilla cream. We don't need eggs for that. And today there are so many tasty vegan butters that work well depending on the what it is that you're making that you should be able to do a pastry cream.
