What are some ideas with corn meal other than muffins & and the usual?

Answer:
Well, I love cornmeal and we have a local-ish, um, flower, a corn facility. I don't know what to call it actually. It's a mill and they have the most delicious corn mill I have ever had and they have a blue one too. So I definitely love cornbread corn muffins. What about polenta? And sometimes I put corn meal on the bottom of a pie crust or another dessert. It gets a little bit of crunch. You can make polenta sweet or savory so it's good. But getting back to atopic of spring cleaning and making sure that your ingredients are fresh. Corn meal, which is very healthy can go because it has, it's got a high proportion of fat but good fat so it can become rancid. I keep it in the freezer, I keep mine in the freezer and sometimes you can smell the rancidity. Not always, but you will taste it. So buy fresh corn meal and keep it frozen.
