Question:
My family did not like the vinaigrette in the Dijon Potato recipe. What could I use to replace the rice vinegar? Lemon juice?

Answer:
So the, the vinegar, uh, is added, um, you know, as a souring agent, there's some flavor attached to it as well, but primarily as a souring agent, um, to stand up against the other, um, heavier ingredients in, uh, the final preparation, meaning the, uh, the potatoes in this case. So, um, you know, think about other souring agents that your family does like, and you, you know, you suggest, um, uh, lemon juice, uh, which is, uh, an excellent choice. Uh, you might even consider cutting it back on the vinegar if that's an option, uh, you know, with your family. Um, but, but other citrus juices, you know, can be, there, could, uh, you know, lime juice. So you might consider mixing orange juice and lemon juice in order to find something that's got a little bit less acidity, a little bit more sweetness, um, and, uh, you're bound to find something in there, okay? That would be satisfying. Uh, you can even mix vinegar and a citrus juice. Okay? So all of these are possibilities, um, as, uh, you kind of navigate your way through, uh, the cooking experience, uh, and at the same time, you know, deepen uh, your knowledge and broaden your skillset.
