First, steam the baby potatoes and prepare the Dijon Vinaigrette. Leave the potatoes whole or if you prefer, cut the larger ones in half.

Can I use apple butter instead of fruit paste? I made the apple butter (apples, cinnamon, cloves, nothing else).

Rouxbe StaffJulieta, the dressing should be fine for a week or so in the refrigerator. And, yes it can be frozen. Upon thawing, give it a mix to re-incorporate the components.
Thanks Eric. Just made the dressing with apple butter and I think it works. Will try the apricot paste after I go through that section of the course (on how to make fruit pastes).
