Steps
Method
First, steam the baby potatoes and prepare the Dijon Vinaigrette. Leave the potatoes whole or if you prefer, cut the larger ones in half.
Place the potatoes in a mixing bowl. Drizzle the dressing on top, add the chives, and toss gently to combine.
Serve as a side dish for a summertime picnic or bring to a party and impress your friends.

How long does this dressing keep? Can it freeze?

Can I use apple butter instead of fruit paste? I made the apple butter (apples, cinnamon, cloves, nothing else).

Julieta, the dressing should be fine for a week or so in the refrigerator. And, yes it can be frozen. Upon thawing, give it a mix to re-incorporate the components. -
Thanks Eric. Just made the dressing with apple butter and I think it works. Will try the apricot paste after I go through that section of the course (on how to make fruit pastes).
