Step 1: Preparing the Dijon Potatoes

Preparing the Dijon Potatoes
  • 4 cups baby potatoes, steamed or boiled until tender and cooled
  • 1/2 cup Dijon Vinaigrette
  • 2 Tbsp chives, chopped

Method

First, steam the baby potatoes and prepare the Dijon Vinaigrette. Leave the potatoes whole or if you prefer, cut the larger ones in half.

Place the potatoes in a mixing bowl. Drizzle the dressing on top, add the chives, and toss gently to combine.

Serve as a side dish for a summertime picnic or bring to a party and impress your friends.

    Can I use apple butter instead of fruit paste? I made the apple butter (apples, cinnamon, cloves, nothing else).

    Julieta, the dressing should be fine for a week or so in the refrigerator. And, yes it can be frozen. Upon thawing, give it a mix to re-incorporate the components.

    Thanks Eric. Just made the dressing with apple butter and I think it works. Will try the apricot paste after I go through that section of the course (on how to make fruit pastes).
