Question:

Can you suggest alternative fishes from salmon that will work with roasted salmon and garlic?

— JULIE PERLMUTTER

Answer:

Yes. Um, anything with some heft to it? So a nice thick piece of cod. What do you want? Is the, the fish to cook at the same rate as does the tomatoes break down and sort of simmer together into a sauce, right? So if you have a piece of flounder or trout, very thin on top of that, you're gonna overcook your fish by the time the sauce is really ready, anything with about a three quarter inch or greater thickness is gonna work. You also don't wanna cover completely all of your tomatoes. You want them, you want that steam to be able to ex escape a little bit. Of course, you're gonna cover up some of them. Those are not gonna cook quite at the same rate as those that are around it, et cetera. So, hey y'all, there you go.
