What do you like to eat on sweltering days?

— Fran Costigan

One of my favorite memories as a child in the summertime is my mother making friend. And I had this conversation the other day about making tuna salad in a lettuce boat, uh, with rye bread on the side, uh, on a Friday night. So, um, if I love the Rouxbe tuna less, uh, salad, and I eat that, but I also find that eating a lot of cucumbers and also making cucumber water is just so refreshing and so delicious. And the other thing, when you live in Philadelphia, uh, there are water, ice, uh, stands almost on every corner. If you live in New York, you may know it better as Italian ice. I happen to love water ice. But, uh, in an eight ounce cup of water ice, there are 36 grams of sugar. And the, uh, sugar content in a water ice can vary between 36 to 97 grams of sugar. Do the math divide by four. You'll see how many teaspoons of, uh, sugar are, are in there. So what I've been doing for the summer is making my own water, ice in my Vitamix with one whole lemon chopped up, one and a half cups of ice, and one to two tablespoons of maple syrup. I used this last week in my class as a dessert. Most of the people in the class were diabetic, and they absolutely loved it and found it to be equally as thirst quenching. So, um, lots of water, cucumbers, and that tuna less salad takes me to the summer for the whole time. So, Fran, that was a great question. Very good question.
