What are your favorite hot weather lunch and dinner menus?

Answer:
That tuna less salad and make a double batch of it because I will eat it for breakfast, lunch, or dinner. It's that good. Uh, cold soups, a nice gazpacho. I'm working on a recipe for a food co-op right now cuz they're having tomato month next month. So I happen to like gazpacho and I do remove the skin of the tomato because I just don't like that little texture that it gives. And I do like to add some whole wheat Italian breadcrumbs to it, which I think are absolutely delicious and add a different kind of quest, uh, texture.
