Are chanterells safe to freeze? If yes, in what form and for how long?

Answer:
I think that what you would want to do is to, uh, either saute them or cook them or steam them or whatever, and then flash freeze them, uh, par boil them or just blanche them. And, uh, then put them on a cookie sheet or a tray, put them in the freezer, let them freeze. And then once they have frozen, you can store them in a bag. So you can take them out by the handful when you need to have, uh, some mushrooms to use in a recipe, but I would not freeze them raw. Um, that was a good question.
