Question:

What is tofu? Is it too processed to retain its whole food nutrient benefits?

Answer:

So basically tofu is taking the edamami, the soybean and, and processing it, but it's not considered what we call this ultra processed food and soy. When we're looking at the science of isoflavones, which are like the superpowers in in soybeans, we tofu has, has the isoflavones in there, um, but as usually happens in developed countries, if something's good in a food, let's put it into a supplement and make, um, it be really, really high in these components. And one is food and then one turns to medicine, that again needs somebody who's knowledgeable to let you know. So for anybody who has like estrogen positive breast cancer, they're gonna stay away from the supplements, but they can still consume two to three servings of, of soy a week. And all right, so 25 years ago I couldn't answer that question. I was working in oncology at Columbia Presbyterian and we didn't know, and people were told, oh no, you have to stay away from all soy products. And then we look at Asia and we see that there's less breast cancer there and we're like, okay, that doesn't seem to fit. And so they've done a lot of research on that. So soy tofu is, is I would say processed like hamburger meat is processed from beef and not like what you see when you get ingredients that you can turn into different types of meat products based on the same ultra processed thing.
