What vegetables have the best nutritional value eaten raw and which ones are best cooked?

Answer:

The scope of this question is really a big one because I think it's important to look at some of the benefits of eating raw, that it's a bigger antioxidant boost. Uh, it can benefit, uh, certain, uh, lifestyle related, uh, conditions like cardiovascular disease. It really gives you a pump for your nutritional absorption and decreases your carbon footprint because you're not cooking anything. So, um, I eat a lot of raw vegetables, uh, use using leaves as wraps, um, uh, grating beets. So using them raw, so making them into a delicious, delicious salad. I think you can eat any vegetable raw with the exception of potatoes, sweet potatoes or white potatoes or golden or Russ or whatever kind of potatoes that you like. So I think it, a lot of that depends upon your own palate and what you like and what's convenient to you or what grows near you. Um, but I do enjoy eating them and not just in salads, but there are like lots of other things that you can do. Like I mentioned previously, you know, making collard wraps or, um, making a delicious kale salad. Uh, today I was at the farm where I'm the resident chef and we made a Brazilian feta, which is a black bean stew, but it was loaded with a lot of vegetables that were cooked. And then at the end I threw in some raw shredded kale. So there's kind of like that balance that goes on. So that is a great question and, um, I hope that I've answered some of your questions. The other thing, cleanup with raw is much, much easier, just less, there's no pot or pan to do, and maybe you've gotta work on your, your grader or something like that.
