Question:

When submitting our mise-en-place photos for assessment, should we also include ingredients we may use as side dishes, or just ingredients for the main dish being assessed?

Answer:

Let's do the roasted carrots where it calls for carrots and lemon juice, and I forget the others, but just those ingredients. If you're going to make a side salad with that, I don't need to see the side salad ingredients. I wanna know that your mis and plus is organized, that everything is portioned as it should be, and then it is displayed in a, in good light. Now, I also wanna say that all of your ingredients need to be out of their original containers. Uh, you might have to put some pepper in something, it might say pepper to taste, um, even if you just grind a couple of, uh, uh, peppers peppercorns and have that in a thing, or, um, I see lots of times, uh, people are making a tomato, a marinara sauce, and they leave the tomatoes in the can. Um, the preference should be that everything is at the ready. And when I say in the can, I mean they're on open. So everything has to be open, poured into displayed portioned, et cetera, et cetera. The side salad does not need to be shown. Uh, it is always fun, however, at the end of an assignment to see, you know, the route that you took to get to your beautiful dish, uh, and maybe adding a side salad or whatever.
