Question:

What can you substitute for garlic and onions when you can't eat those flavorful enhancements?

— Janet Batchelder

Answer:

So it really depends on what it is you're making. That's a really big question. But there are definitely other flavor enhancers, the spices. Um, I don't know what you would because like if you can't have onions, but can you have lees? Can you have scallions? Can you, if you can't have any kind of onion, um, then you just leave that out and you add other flavorful ingredients and it's gonna be, you're gonna keep trying things out until you find what it is you're actually looking for. So if you gave me a sense of if I was to make a stew and I couldn't use garlic and I couldn't use onions, then I am going to make my rear me like a Marquette. It's not like that mere POIs, right? Which is your, your celery, your carrots, and your onions. I would leave out the onions, but I'd still have the carrots and the celery in there and I would g bloom some spices, probably rosemary, maybe some thyme. Really give it this incredible flavor. I'm gonna add some umami ingredients to that. So maybe I'll add a little soy sauce or ster shear sauce. Um, mushrooms, saute some mushrooms in there that's gonna really give it a pop and maybe some tomatoes to enhance that flavor. Really bringing umami out.
