Question:

Can you address Anosmia (loss of smell) and how it effects flavor?

— JULIE PERLMUTTER

Answer:

Now it affects flavor immensely. We had talked about flavor is made up of 80% aroma and because it's made up of 80% aroma, those that have an OSSA will, I'm gonna keep saying it till I get it right. Um, they will have a really hard time eating and it's a tough one. So there's taste, they'll be able to taste, they won't be able to smell, but they also have those somato, somato somatosensory, right? So I'm pointing to my jaw because that is the crunch, that's the, the chilies, the, the, the fake, uh, the fake coolness. So mint spearmint, different kinds of mint have this fake coolness to it. If you can't smell, you can still get that sense of, of fake coolness or fake heat, like from the chilies. You can add some pungent or as stringent ingredients as well. You're gonna focus more on the somato sensory input. You're gonna focus on the textures, the chilies, the the false sense of cool and, and hot and all of that to try and spice up literally the meal. Um, and your expectations shouldn't be set very high and hopefully it's not forever. I know a lot of people lost their 10 sense of smell during covid. Um, some of us think it has to do with iron deficiency or zinc deficiency. So just throwing that out there. I don't know why, um, you're asking the question, but I always love to throw out a covid tip, um, for those. And um, don't overdo it on the zinc. It could be toxic. Um, but making sure you have enough, um, iron in zinc can see, can help there and just stay with it. I know with chemotherapy, I mean I was there myself, everything tasted metallic. It is the, it is what it is for a while. And all I survived on during that time was pepper farm goldfish and roll lollipops. I did. They were my two food groups. And then afterwards, boy, I, um, really came around. I mean I ate the healthy food, but there's times where we can't and that's okay.
