Question:
Why are French Fries deep fried twice? Why not boil them first and then fry them to brown them? Why not just one long fry?

Answer:
So when I make french fries, I oven fry them. And if you go back to that, uh, Rouxbe assignment of, uh, roasting vegetables where vegetables are laid out one by one not touching each other so that they roast instead of steam. 'cause when vegetables overlap or touch, they will steam instead of roast. So I have the patience of a saint to lay down 50 or 60 pieces of French fried potato cuts and place them into a 425 degree oven, bake them for 20 minutes, flip them for 10, and they come out as deliciously as a french fry. Or, uh, if you have an air fryer, you know, the air fryer, I think, uh, has been a really beneficial thing to many types of chefs and eaters. And, uh, I'm a big fan of, um, of, uh, air fryers.
