What's the best substitute for butter in baking cookies or cakes?

Answer:

It's gonna depend specifically on, you know, the, the function of the ingredient and just how the butter is treated, uh, you know, in those recipes or those formulas. Um, but, uh, uh, you know, you know, when it comes to cookies, as I mentioned earlier, uh, they tend to be pretty forgiving. Uh, for cakes, it, it just, it, it depends, um, uh, on what, uh, mixing method, what kind of cake you're making. But, you know, the first thing to do really, uh, is to go down to the grocery store and, and choose a store that, um, uh, you know, is like a a, a whole Foods or a Wild Oats, or a New Seasons, um, that will have, um, you know, maybe a larger selection of plant-based options, um, for things like butter. And, uh, you might even ask, um, an employee in that dairy section, uh, for the latest information, the latest products, okay? Um, in, in some cases. Uh, so it's, in other words, something off the shelf, uh, is probably gonna give you a, a, a, a, a, a good solution, okay? In some cases, coconut oil, uh, can be a good substitution, again, depending on what, what you're making and how you like that flavor. All right? Um, I, in the past have used a product called, uh, uh, uh, flora, um, and it was, um, a plant-based butter substitute, um, out of, uh, New York City. And, um, more recently I've come across a product at a food show, and, oh, boy, I'm trying to think of the name now, something like, um, it starts with the letters VIO vo vo life, or something like that. Um, so you might give that a try. Those are a couple of products that are formulated, um, to, to mimic butter to come, to come pretty close to butter, okay? In terms of flavor look and, and performance. Um, now, you know, I might steer you clear of things like spreads, like, like these butter flavored spreads. Like, um, gee, I can't believe it's butter. If, if, if that's a real thing, I'm not even sure. But, um, um, those things tend to have a lot more air whipped in them, uh, and they'll perform, um, uh, different a lot of times from, uh, just plain old butter. Okay? So, so keep that in mind as you, uh, think about what you might choose.
