Is there an advantage to using whole tomatoes in recipes vs. diced tomatoes?

Answer:

So typically you're using whole tomatoes, I guess I'm thinking you're talking about canned tomatoes here. Whole tomatoes are typically peeled. Um, and then, and, and the can, they're actually great for recipes and uh, for um, like soups and sauces because they'll actually break down really, really well. And a diced tomato typically is not, it's not gonna break down as much as a whole tomato would. So if you're making a sauce and you, or a soup and you want it to be really, really smooth using a whole tomato's, a much better way to be able to do that because it'll just break down, um, into that microscopic level where the diced tomatoes typically do have the skin still on them. They're going to have little bits of that in there as well. Um, so you'll see even if you blend them all the way up, they have a little bit heavier texture or grainier texture to them than the whole tomato would.
