Question:
If I am roasting vegetables without oil, do I need to dry them first if I am going to toss them in a liquid anyway before I roast?

Answer:
I am always in the habit of drying my vegetables just because I don't want them to get soggy. So I don't think that there's much of a difference. But my own personal practice in this little kitchen is that I like to dry the water off. Plus I don't want the water to add any diluted. I don't want it to dilute any flavors that I might be, uh, adding to my marinade or whatever it is that I'm going to use. So, um, another very good question. All sensible. Very, very good.
