Question:

I have noticed a lot of WFPB recipes call for vegan butter, and I typically do not buy any due to trying to avoid processed/sat fat. What do you recommend in place of this?

Answer:

Well, Molly, I really wonder where you are seeing whole food plant-based recipes calling for vegan butter. Because most whole food plant-based and no oil recipes don't use vegan butter at all. They, they use no oil or very little, and vegan butter is, you know, combination of vegan, of vegan fats, of vegan oils. So they're not, it's not hydrogenated, it's a process. So no, um, I don't know any whole food plant-based recipes that call for vegan butter in, if you are looking for a way to eliminate fat from your recipes altogether, we have a unit in the course on replacing fat with fruit purees nut butter, or sometimes you don't have to use anything just a bit more moisture. Some of the sweeteners, the whole food plant-based sweeteners like maple syrup or humectant, and so they add moisture. So there you, there you have that.
