Question:
How can I make fruit less bitter without just adding more sugar?
— Simar Clements
Answer:
So, you know, when you're eating fruit out of hand or making a dessert such as, this is crazy, I just made a, oh, here we go. This is, I'm gonna tell you more about this. This is what I call an eaten mess. It's a mess, but it's delicious. You always want to, when you get fresh fruit home, particularly with berries, but with all fruit, you want to look at the fruit. If there is a spoiled very soft or even moldy berry, it's going to affect all of the berries in the container. So you really wanna go through and look and you wanna taste your fruit. I mean, some fruit is very, very, very sweet. And other of the same categories sometimes is a little B bland. If it's bitter, then that's an unusual situation. I mean, I think of citrus, maybe some army citrus is sour, but it's a nice sour. So one thing that really helps elevate flavor of fruit of almost anything is a little bit of citrus juice and citrus zests. So I keep lemons and limes around all the tribes. So Samar, why don't you try adding a little bit of citrus zest right now? In fact, over there I have been eating a lot of watermelon. I love watermelon and it's, you know, it's very cooling and hydrating. But the last one I bought didn't have a lot of flavor. It wasn't spoiled, it wasn't bitter, it wasn't mushy, it just wasn't a great watermelon. And I sprinkled it with lemon juice. I love lemon juice on watermelon and it was great. So why don't you try that? You can always, if you don't wanna use sugar, you can always add a little bit of maple syrup.
