Question:
I found a recipe for Frozen Avocado Nice Cream that included corn starch as an ingredient, among avo, cocoa powder, maple syrup, plant-milk. Why was the corn starch added?
— Char Nolan
Answer:
I would say that is a poorly written, a poorly written or poorly tested recipe. Corn starch or arrowy starch are thickeners, but you don't just an avocado ice cream is not cooked. I'm imagining this ice cream isn't cooked and so the corn starch is just gonna sit there and you're going to taste it. You do not need corn starch or any starch when you're making an avocado ice cream.
