Question:
When a recipe calls for coconut milk what's the best way to get the separated cream on top to recombine with the liquid? I'm not refrigerating the cans, but it still separates.

Answer:
If anybody here who has used coconut milk, canned coconut milk has probably seen at the top part. Usually it's about two thirds. It really depends on the brand and it just depends on the particular can. So you have this heavy, really heavy, you have to dig it out, the coconut cream on the top and coconut water on the bottom and they do separate refrigerating helps that happen. I mean, helps that to not happen. But, uh, what I do, depending on, I take the, can I shake it? I always wash the top of a can, open it up, pour it into a measuring cup and then whisk it really hard. And that is the only way to use to get the coconut milk, the cream on top to recombine with the liquid.
