Question:
If you want to grill vegetables on a grill, what can I substitute for oil?
— Winn Archambeau-Munoz
Answer:
Get your grill hot. Is the answer for that you don't need to use oil if your grill is hot enough it will create the separation that you're looking for the oil or the lubricant to provide right if you're Grill is not too temperature. Just like if your pan that you're trying to sear your mushrooms in is not very hot. What are you going to do? Oh, you had your mushrooms in and you start steaming them instantly, right? Because you're not searing you're just releasing Juice by Heating and basically steaming the mushrooms. Same thing is true on your grill. If you don't want to use the oil then make sure that Grill is hot enough. And as soon as you put that down that heat will create that separation. It will also create all that caramelization and crusting that you want from it. And if you have denser, excuse me larger pieces of vegetables. You know as opposed like say a half of a zucchini sliced lengthwise as opposed to a very thin slice of zucchini. That half zucchini is gonna take longer to cook. So you want to start it on high heat and then possibly move it over to a lower heat area of your grill to continue cooking and by that time the it won't be sticking and you will be all set.
