Question:

I'm trying to reduce oils/butter in my diet and stick to more whole food fats, however, I find it challenging to get a nice evenly roasted veg without the oil...any suggestions?

Answer:

So going back to sort of answer this question a little bit earlier, you know get a a cast iron pot something that's going to hold its heat really well get I just realized that oven was on the whole time wasting electricity and it's not good for the Earth. Get the pan really smoking hot and then add your vegetables in so that's going to get that instant sear to it right off the bat and then throw the whole pan into a hot oven and that way you're going to get that really dark caramelized outside maybe even some charring and burning so don't go too far into that realm but a little bit of that is very good the bitterness to offset the sweetness of the revenge. And then also as I mentioned, you know at the very end make a little slurry of some spices cumin coriander fennel sea ground fennel seed or just you know, Mash mashed fennel seeds. Maybe a little mace or nutmeg a mix that with just enough water or even something like apple juice or another kind of juice just to kind of make a slurry of it take the vegetables out toss the pan with that so that they evenly coat get the spices evenly distributed. Throw it back in the oven for like two minutes to get that water off and to bloom those spices and there you go.
