Question:
Do you have a favourite method for cooking dry chick peas and do you re-soak them. I find when I pre-soak I get a more mushy pea?
— Marcy Jackson
Answer:
I once bought an instapot because I thought I needed to have an instapot and unlike many and Patrick Kenneth test to this. I felt like I was Landing a helicopter using it just didn't make me feel comfortable. So what I do is I'm old school. I soaked them overnight. Rinse them off really? Well after that. And then I cook them in a cast iron pot. And I cook them in a cast iron pot for two reasons one because when you cook with cast iron, it retains heat a lot better than if you were using stainless steel. I know some people like to use a crock pot but I'm not sure why they're mushy but Make sure that you're rinsing them off really well between the soaking and then before you cook them, I think that that has a lot to do with it.
