Question:

I am thinking of making my own pasta. Is it really healthier? Can I substitute pureed spinach/water or beet/water instead of egg/water? Any tips?

— Luann Cronican

Answer:

Okay, you can certainly you can certainly Infuse purees into it purees have a good deal of water in them. So certainly you can do that. Beat water beet juice. I don't see any reason why that wouldn't be a straight substitute for spinach. Those leaves are so Delegate I would just make that a puree rather than trying to juice it. So you get the full full vegetable in there. You get a huge amount of color out of that as well. Is it healthier? Well, if you're adding adding vegetables into it? Yes, because you're adding nutrition just in place of water, right? Is it otherwise healthier? I wouldn't say so necessarily. I mean, is it healthier than the box of Prince pasta you get on the Shelf maybe but so is anything they're going to make at home yourself in terms of nutrient retention, but It'll be a lot more fun. I probably really really good and said you can also get really good pasta these days. Yeah. Yeah, there's a lot of artists and pasta makers and but it sounds like I mean, you've got a lot of creative ideas that you're you're pursuing here. So by all means but yeah go to it. And there are Indies gonna be a lot of recipes that don't have eggs in it for pasta. Yeah, there's a lot of just water and flour recipes and it's all just elbow grease at that point. So yeah.
