Can you give some tips for baking with non gluten flours such as oat, almond, rice, etc., instead of the traditional gluten free flour?

Answer:

I love anything has to do with science. And yeah, that's why I ask you she has a deep history with this stuff. My Matthew is is gluten-free. So I do a lot of gluten-free baking but I'll be honest with you I use the cup for cup or the I think King Arthur brand has a has a gluten-free and it's some combination generally of arrowroot and rice flour and whatever else there are a lot of good ones out there. You just got to find the one that works for you. Otherwise just make macarons and use almond flour for everything. Yeah, right. Yes when in doubt just make macarons.
