Now that you've mentioned reductions, could I use coconut sugar to make a fruit reduction?

Answer:

If you're making like a glazed fruit or a fruit syrup, or you're reducing fruit. I would say coconut sugar should work. Really really well. It's not going to become. completely dissolved like, you know regular granulated sugar might meaning part of the sugars might dissolve but you also might have a little bit of residual texture from the coconut itself in some cases, but otherwise should work just fine. It's a really really smart idea.
