Question:

How do I make homemade vegan mayo that actually tastes good?

— Marie Leak

Answer:

I am not somebody that ever ate a lot of mayonnaise but there was a male on the market called just just Mayo they make just Egg and I wanted to recreate my mother-in-law Winnie depression mayonnaise cake, you know during the Depression people were Making a chocolate cake using mayonnaise in place of eggs because what is mayonnaise if you don't know mayonnaise is an Emulsion of oil fat. and egg yolk and it's prepared in a particular way. So I was looking for a nice tasting Mayo. And I bought this just and the cake worked. I think the recipe might be on my website for ancastigon.com. So mayonnaise Vegan, mayonnaise can be made typically it's made with an unsweetened soy milk or later as we came to know aquafaba, which is chickpea liquid with aquafaba. And oil is added you can't get away from not using a fair amount of oil to make mayonnaise and I have done it with aquafaba using my immersion blender and it worked in terms of making it taste good. You want some salt you want some I like adding some dry mustard lemon and it works now there's a link in the chat to miyoko shinners book homemade vegan Pantry. She has great recipes many of you know, miyoko. She is a terrific really interesting woman. And so her she has a classic eggless meringue she's using soy milk. She says soy milk or other non-dairy milk a little bit of mustard. This is the first time I'm looking at it but you know, I went to mustard apple cider vinegar for the tang and sea salt or black salt. So the call the salt that gives our tofu scrambled there. the eggy flavor a teaspoon of organic sugar optional and then for one cup of the plant milk one and a half to two and a half cups of canola or other neutral oil. So why don't you try that if you are already starting Marie with a homemade vegan mayo recipe that you like just add a little more flavoring add some vinegar add some Citrus add some and just work with it and there's the link and good luck to you.
