Question:
What is the best milk to use to create buttermilk? I noticed oat milk tends not to curdle as almond milk.
— Mabel Montoya
Answer:
Well that's interesting to me because to me that's backwards the milk that's going to curdle for anyone who is unfamiliar with what we're talking about adding an acid to milk dairy milk or a plant milk. The milk's going to curdle if you leave it alone for a little while. It's not going to taste like buttermilk, but it will work like buttermilk. I find that almond milk doesn't curdle very well. I find that. A more full fat oat milk does the best milk to curd that curdles? The best is soy milk has this soy milk, but I like doing that and I do it often.
