Question:

What is a good mixture to use to bind the lentil burgers with?

— Phyllis Melton Giddings

Answer:

This is a very common problem. So you're not alone for this. Um, you know, probably one of the you know, most common binders for a burger. Like if we're looking in the non plant-based sense is an egg. So we're gonna do is look for something like an egg replacer. So you can go with something like a flaxseed or an aquafaba. It's actually a really good way to be able to do that now specifically with a lentil burger. What I like to do is actually use something like an aquafaba, which is actually just the water from the can of chickpeas. Strong protein Source in there and what I'll do is I'll put lentils and the aquafaba in together and blend them into blender together. To make kind of a sauce and then I'll take the rest of my ingredients from the lentil burger and then put them together and you'll find that it holds a lot better because you're using the protein Rich Chaco fava and the protein from the lentils and it makes us really great binder to be able to hold together as well. So that's probably what I would recommend specifically for the lentil burgers and aquafaba mixture, but there are you know, a lot of different kind of egg replacers and that's probably where you want to be able to start so feel free to experiment a couple of those but I'll bet you that the aquafabo and the lentil mixture will probably be the best bet for you.
