Can you talk about the various types of chocolate and how to decide which one to use?

Answer

You have to do some tasting we have to do a little bit of homework and taste some different chocolates to decide what tastes good. To our particular palette and then choose them based on your recipe. I would never make a fine chocolate sauce or ganache with chocolate chips. chocolate chips are heat resistant chocolate the cacao percentage or it's you know, the chocolate Mass. It's called it's very low. So that's how you decide.
