Question:

In your cookbook, Vegan Chocolate, the recipe for Very Fudgy Brownies (pg 128) calls for the batter to rest for ten minutes before baking. What is the reason for this step?

Answer:

I actually had to go back to my book because and look because when you're doing making vegan cakes what's leavening the cakes? Is baking powder baking soda and vinegar and so my instructions are generally speaking get that right into the oven. but this the recipe for the very fudgy brownies has some arrowroot or cornstarch in it, and that's as a binder and just Just make a very tender fudgy result. And so yes, I'm letting the batter and very little leavening. I'm letting the better rest to absorb. So that's the reason.
