Step 1: Making the Vinaigrette

Making the Vinaigrette
  • 1 clove garlic
  • 3 tbsp red wine vinegar
  • 9 tbsp extra-virgin olive oil
  • sea salt, to taste
  • freshly ground pepper, to taste

Method

To prepare the vinaigrette, first mince the garlic. Using either a bowl or a jar, mix together the garlic, vinegar and the olive oil. Make sure to use a quality olive oil, as this dressing is all about simple, but quality, ingredients. Finish with a good pinch or two of salt and pepper and shake to emulsify.

This dressing will keep in the refrigerator for a couple of days.

Chef's Notes

The variations of this everyday vinaigrette are endless. Simply add items such as minced shallots, fresh herbs and spices to create new flavors.

    I just watched the lesson on selecting and storing greens. It inspired me to go to the Jean Talon market here in Montreal, where I bought the freshest, most tender lettuce. Just finished a huge bowl with the red wine dressing. Amazing. I will add more garlic next time.

    If need to make a large amount of vinaigrette and cannot use a jar what is the right technique?

    If you do not have a jar, no problem at al—a jar is merely used for convenience purposes. Whether making a small batch or a large batch of vinaigrette, simple use an appropriate sized bowl, add the garlic, vinegar and then slowly add in the oil, while whisking.
