Method
To start the crostini, preheat the oven to 375° Fahrenheit. Cut the baguette into 1/2-inch slices and place the pieces onto a parchment-lined baking tray. Brush lightly with olive oil. Bake, oil-side up, for 8 to 10 minutes or until slightly golden.
While the bread is cooking peel the garlic and set aside. Once the bread is ready, lightly rub the oiled side with the raw garlic. While the bread is still warm, sprinkle with a little grey salt.

How do you store so that they remain crispy?

Hi Cecilia, thanks for your question. My preference here is to bake as needed. If you want to prepare in advance, you can cut, oil and salt the bread slices and freeze them in a ziplock or tupperware. Just before serving you can pull the crostini directly from the freezer and pop them in the oven on your baking tray. It adds no more than 1 minute to the cook time. When hosting a party, I usually bake as needed so I don't end up with too much wasted bread and the crostini remains crunchy and warm. If you make these and want to store them after cooking, I would store them in a ziplock (freeze if it is going to be more than a day or two) and just throw them on a cast iron skillet to reheat or in the oven for a couple minutes.
