Steps

Step 1: Preparing the Sauce

Preparing the Sauce
  • 2 tbsp mushroom flavored oyster sauce (or regular oyster sauce)
  • 2 tbsp Shao Hsing rice wine (or dry sherry)
  • 2 tbsp soy sauce
  • 1 tbsp sambal oelek

Method

To prepare the sauce, simply mix the ingredients together.

This sauce is enough for 2 stir-fry servings. The recipe can be increased to suit your needs.

This sauce can be stored in a tightly-sealed container in the refrigerator for quite some time, so it is worth it to make a large batch to use whenever needed.

The recipe mentions that "This sauce can be stored in a tightly-sealed container in the refrigerator for quite some time" Can you define "quite some time"? 7 days? 10 days? , 2 weeks? Thanks

All of the elements in the sauce can store well on their own. Almost all of them indefinitely. You can store this sauce for several weeks to months in a tightly-sealed container in the refrigerator. As with everything that is stored for a long period of time, it is best to smell it and taste it prior to using. Now, if the sauce had fresh ginger and garlic mixed into it, I would only say a few days. These elements cannot keep for long periods of time... but for sauces made from vinegars and other condiments that keep well, it is okay to store them longer. Hope this helps. Cheers!

What is sambal oelek? Is there a substitute for it?

Here is a short Rouxbe tip video that explains what sambal is. Substitutions can include dried or fresh chili's or another hot sauce. It really depends on what you are making and how hot you like things. Cheers!
