  • 3/4 cups lacuma powder
  • 1 cup almond flour or cashew meal
  • 1/3 cup mesquite powder
  • 1/3 cup cacao nibs, coarsely chopped
  • 1 tsp vanilla extract or scraped bean
  • 1/4 cup agave
  • sea salt, to taste
  • splash of water

Method

To prepare the cookies, in a bowl, combine all the ingredients, crumbling as you mix. If you need a bit more moisture, add in a small splash of water.

Place dough in plastic wrap and roll into a cylinder. To serve, unwrap and slice.

    Thank you for this recipe. These cookies are wonderful. The second time I made them, I subbed the almond flour for gluten free oat flour (I use Bob’s Red Mill GF old fashioned rolled oats and blend in blender to make the flour), and used dried mulberries in place of the cocoa nibs. I needed a low fat version, but wanted to keep the texture and flavor of the original similar. They were delicious!
