Steps

Step 1: Preparing the Cucumber

Preparing the Cucumber
  • 3 cups cucumber, peeled
  • 1/2 tsp sea salt

Method

To prepare the cucumber, using a mandolin, slice the cucumbers paper–thin into a bowl.

Add the sea salt and gently toss and press the cucumbers. Allow to sit for 10 minutes.

Continue pressing and tossing the cucumbers, massaging to release the water. Allow to sit for an additional 5 minutes.

In fine strainer, strain the water from the cucumbers. Reserve the cucumber water to add to juices, dressings or raw soups. Juice can be kept refrigerated for 2 to 3 days.

Step 2: Finishing the Salad

Finishing the Salad
  • 3 tbsp sesame seeds, dry–toasted in pan
  • 1 tbsp toasted sesame oil
  • 1 tbsp lime juice or Mirin

Method

To finish the salad, toss the remaining ingredients with the cucumbers.

Serve sunimono as a side salad for any Asian–themed meal.
