This blended dressing uses avocado as a dairy replacement for a creamy, ranch-style dressing.

Steps
Step 1: Preparing the Dressing
- 1 to 1-1/2 cup plain Non–Dairy Milk*
- 1 avocado, pitted and flesh removed
- 2 tbsp nutritional yeast
- 1 to 2 cloves of garlic
- 1 tbsp onion powder
- 1/4 tsp chipotle powder, or more to taste
- 1/4 tsp freshly ground black pepper
- sea salt, to taste
- 2 tbsp fresh dill, minced
- 3 tbsp chives, minced
- 1 tsp Dijon mustard
- 1 lemon, juiced (optional)
Method
To prepare the dressing, in a blender, add all ingredients, except the chives and combine until smooth.
If using as a dip, rather then a dressing, add only 1 cup of non-dairy milk to start. Once blended, add additional milk as needed. The dressing should be thick but still somewhat pourable. Continue to add the milk, until you reach the desired consistency.
Lastly, taste for seasoning, add more salt and/or pepper as needed. If desired, add fresh lemon juice.
*Note: For the best results, make your own Non-Dairy Milk.
To serve, pour mixture into a bowl and whisk in chives.

Rouxbe StaffHi Melodie- As Rouxbe is not a recipe website, you may need to look elsewhere to find a regular ranch recipe (there are tons of recipe databases, etc.). You can start by googling the recipe you want or check out your favorite blogs. Choose one that uses real ingredients rather a dried packet/mix. Good luck! ~Ken

Rouxbe StaffHi Debbie: thanks for writing. The nutritional yeast often renders a creaminess to the texture, as well as a "cheese-like" flavor. You can omit the nutritional yeast, but it will change the texture. You can adjust the seasoning (a pinch of added salt), and for texture, a teaspoon of flax meal. Since it will be made in a blender, the flax meal will not be visible, but will add texture to your dressing. Hope this helps. Cheers, Char
