Steamed and chilled baby potatoes are combined with a sweet and tart balsamic dressing.

Steps
Method
First, steam the baby potatoes, prepare the Sweet Balsamic Dressing and julienne the roasted red peppers. Leave the potatoes whole or if you prefer, cut the larger ones in half.
Place the potatoes and the peppers in a mixing bowl. Drizzle the dressing on top, add the ripped basil and gently toss together.
Serve as a side dish for a summertime picnic or bring to a party and impress your friends.

Beforehand, it seemed like a really daunting task. Roasting peppers, create the dressing for which you need to make fruit paste. None of which I had ever done in my life. Buying all these ingredients which I never use. Oh, and I’m nothing short of a kitchen-disaster. Needles to say, I felt overwhelmed and needed to gather all my courage to start this recipe others described as being ‘so easy’ which made me feel even worse. And then, after just following the instructions and being surprised by the easiness of it all, it tasted great. I don’t know whether this was due to all the efforts or because I really nailed the recipe tho. ;);) So, if you are feeling like me, just do it and it will leave you surprised and feeling proud…

Hiya, Made the dish Yum! However, I had a strong acid taste with the Sweet Balsamic Dressing. I used every ingredient except the vanilla bean, did not have any on hand so I used Pure Vanilla Extract. The date paste came out great and I dont know what happend. Anyway to neutralize the acid from the basalmic dressing? Would surely appreciate. ; ) Oh, my mistake.... I used a Nutri-Bullet to mixed the SBDressing, it was emulsified I like liquids. The next time I will use a blender. I'm just "Loving" the class and recipes!

Hi Juanita, It may be as simple as adding just a dash of salt to the dressing. Salt helps to balance acidity and vice versa. Hope that solves the issue! Cheers, Sandy

This is absolutely a favorite for picnic/bbq with guests. We love the potato salad and the sweet balsamic with basil and red peppers are just delicious as potato salad!
