Perfectly seasoned quinoa, topped with a silky cauliflower sauce, tender baby kale and garnished with grated carrots and beets, pumpkin and sunflower seeds and then finished with a generous drizzle of cilantro-lime sauce and cashew sour cream.

Chef's notes

While this dish may seem time consuming, it's actually quite easy to make. Also, many things, like the sauce, the quinoa, cashew sour cream etc. can be made ahead of time. It also tastes delicious, so it's worth any extra effort.

    Hi Chef The dish looks really scrumptious and i will definitely try,however there is one challenge that we don't get nutritional yeast easily in my part of the world (India). Please suggest a substitute for it. Thank you.

    Hi Rashi. No problem. In the cauliflower sauce you can substitute a tablespoon of light miso if you have access to that. Otherwise a couple teaspoons of Ume plum vinegar, tamari or soy sauce. When tossing the kale upon assembly I would add a splash of tamari, braggs, soy sauce or ume plum vinegar again there in place of nutritional yeast. Lauren

    Hi Chef, are the beets cooked first before grating? I am thinking that the carrots are raw but not sure about the beets, I have never eaten raw beets before. Thank you, Leanne

    Hi Leanne, The beets in this recipe are raw, and quite delicious, and have a lovely texture, when finely cut or grated. If you prefer to cook them first, they would be delicious here as well. Enjoy. Cheers, Sandy
