If you find yourself with some leftover melted chocolate, getting creative with mendiants is a nice way to show the versatility of chocolate. Top these with your favorite dried fruits, seed, or spice.

  • 4 oz dark chocolate (70 to 72%), tempered
  • raw, toasted or candied nuts or seeds, chopped
  • dried fruits, chopped of choice
  • quality flaked sea salt, for finishing

Method

To make the mendiants, line a baking sheet with plastic wrap or parchment paper.

Tempered chocolate sets quickly so make sure you have all of your mise en place ready before starting.

Drop tablespoonfuls of the tempered chocolate onto the sheet — use the back of a spoon to spread it out to approximately 2-inch rounds. When using tempered chocolate, make only 5 to 6 at at time, to ensure the chocolate does not set before the toppings are added.

Arrange the nuts, dried and/or candied fruit onto the melted chocolate — creating your own design.

Repeat until all of the melted chocolate, nuts, and fruits have been used. Allow the mendiants to harden at room temperature, or refrigerate the tray for faster setting.

The mendiants can be refrigerate in an airtight container or for up to four days.
