Is there a basic knife skills class?

Answer

Most Rouxbe courses, the pro courses for sure. So if you're not enrolled in one of those I'm sure that you can Find some decent ones whether it be any of the other online culinary school offerings. I'm not sure if Rouxbe has just a straightforward knife class, but you can look into that on the Rouxbe website.
