Question:
Where is the recipe for the brussels sprouts assignment that you mentioned in your office hours a month ago. You referred to a white balsamic glaze that sounds delicious. I got one of those “Microplane cutters’”that you showed us ?

Answer:
Oh, I hope you love the microplane cutter. I think
it hold on a second.
She was referring to this made by
the microplane company. It is perfect for cutting brussels
sprouts. I'm sure Melissa that
it made your assignment go really really quickly and
I hope that you enjoyed that so the Brussels
sprouts assignment is under roasting
vegetables in Rouxbe.
So if you type in the queue roasting
vegetables Rouxbe and it's
where you have a choice of either doing brussel sprouts
or cauliflower or whichever and
maybe Richard can find that and put it up for you.
The trick of that recipe. Melissa is
the placement on
the roasting pan of your vegetables that
they do not touch that they are about an inch
apart from each other that they are lined up in a beautiful
array and that you
follow the proper oven
temperature which by the way, if you
do not have an oven thermometer for
your oven, you may want to get one they're very
reasonable but they sort of help to verify
the temperature of your oven the readout
the LCD readout might say 400 degrees, but your
oven might be cooking slower at maybe 375 so
it's good to have that.
Verification and then you can adjust the heat of your oven as
needed
