I have two recipes for using portobello mushrooms that are delicious. Both recipes say to remove the gills. Why?

Answer:

It is for aesthetic reasons, as, as far as I've ever known. Uh, and, uh, that is because the gills will turn your food black because they themselves are, are very dark in color, and they tend to come out and, uh, just get all over things. And, um, so, uh, it's just for aesthetic considerations. The, the gills in my experience, uh, are edible. I'm, uh, certainly living testament to that. Um, so I don't think it's an edibility issue, uh, but rather an aesthetic one.
