I think some of you know that I was a student at Rouxbe a decade ago, and, uh, I did the Plant Pro course and I was always so intrigued about what would be next. And I would look at the roster of assignments and think, oh, this looks like so much fun. It was almost like reading a menu at a restaurant because everything looked so good you didn't know what to to order. So can you go out of sequence? Yes you can. Did I go outta sequence? Yes, I did. But I do find that in terms of building skills and learning new, new skills in a plant-based kitchen, starting out and going as the assignments are presented is probably a best practice because I found myself as I thought more about this, that I had to go back sometimes and reread or redo something because I missed it because I was so excited to make manacotti or whatever. Manacotti is a great assignment, but you can go as you wish.
