Question:
I'm not able to eat beets any longer. What can I substitute in recipes, savory or sweet?

Answer:
I'm thinking of, uh, uh, Jerusalem artichokes. You could, uh, you know, beets are so good for you. If you can still eat the greens to the beets, which are the first cousin of chard, then I think that that would be something, uh, that would be very helpful to you in terms of substituting in recipes. You could use, uh, purple sweet potatoes. It might give it the same appearance. And they're also just as nutrient dense and, uh, you know, the darker and more colorful that a vegetable is, the more nutrients and antioxidants in this case. So that's, that would be my recommendation. Also, regular purple potatoes would also work as well.
