Why freeze the nut butter? Is it just for ease of portions? It’s already at room temperature

Answer:

Well, if you look at recipes for fancy pie crusts, you always have ice cold butter that's cut into cubes. So if you don't freeze this, uh, you're not going to get the same, um, consistency of your pie crust. Um, it will trust me when I tell you that you wanna cut them up so that the fat emulsifies evenly throughout the recipe. If you just threw in a blob, it would be harder for you to get the texture and you might over need the dough.
