Question:
What is the good fat substitute to make flour tortillas?
— Svetlana Hanson
Answer:
You really don't need fat if you are making tortillas as part of your liquid component to whatever the directions on the ma seca, uh, a bag might say, if it says to add a cup of water, what I do is add three quarters of a cup of water and one quarter cup of aquafaba, because I find that it gives a little bit more body and a little bit more taste. But you do not need to add oil to make corn or flour tortillas. And not too long ago, I sent, uh, Jeff, Erica picture because I made some sweet potato, um, tortillas that were absolutely di Delicious, and all they were was, uh, masa and the sweet potato. And it made a beautiful, beautiful dough. It was easy to me, it was easy to cut into quarters and then, um, make into tortillas. And I don't even use a tortilla press. I just put the masa between two pieces of, and here's the 0.2 pieces of parchment paper, because parchment paper doesn't stick. So that would be the trick in terms of making an oil free tortilla. So, great question. Hope that you make something delicious with it.
